Pressure fish

Regina Welk comes from Stuttgart, lived for 30 years in Charente in the southwest of France, played puppet theater there and also likes to eat fish. The two have been living in Leopoldstadt for some time; now they have decided to do something completely different, something that connects cultures. And at some point they came up with the topic of fish. And because the two are modern thinkers, marine fish was soon out of the running because stocks are overfished and Austria is a landlocked country. So freshwater fish, the concept of a small bistro with daily fish specials, snacks, breakfast and a store with a few nice wines, oils, schnapps and delicacies was soon ready, the location was still missing. And Florian Kaps, head of Supersense, had it: the former Roul book printing works in Afrikanergasse, which served as a branch of the analog Supersense photo development and sound recording department. In the past, says Mike Gross, banderoles for the Czech cigarette trade were printed in this print shop, and the nightly noise of the heavy die-cutters could be heard two houses away. The neighbors were therefore happy that a famously less noisy fish store was now coming in. However, an odour report was required, which was drawn up by a court-appointed odour expert and was the culmination of the seven-month operating permit process. Now everything is ready and Mike Gross and Regina Welke have fish sent to them from Attersee and Weißensee. Easy-to-sell fish such as whitefish, char and salmon trout, rarer fish such as lake trout and eel, unusual fish such as crucian carp and bream, and soon perhaps even eel rod.
The program changes weekly; last week, for example, the motto was "Pacific à la Yui", with char steamed over sake, trout poké and a very enjoyable Hokkaido fish soup with spring onions, vegetables, miso and fish cubes cooked in the soup (€ 5/9). The "fish on bread" offer was also not bad, with three juicy slices of Brotocnik sourdough bread topped with smoked trout rillette, trout cream spread and marinated arctic char, the latter in particular being extremely good (€ 6.50). The dish of the day was Maghrebian fish ravioli with vegetable couscous, a good idea, unfortunately a little too mild, but what can you do, the whitefish from the oven was only available the next day (€ 14). There are some great beers, a few interesting wines, crémant from the Charente and coffee from Charles Fürth. To sum up: Leopoldstadt has a fish store again.
